    You will need the following ingredients: 500g fresh spinach, 3 tbsp rapeseed oil, 1 shallot that is finely chopped, 6 spring onions where the ends are trimmed and finely chopped, 2 garlic cloves that are finely chopped, pinch of ground nutmeg, 200g ricotta, 1 egg thats beaten, 2 tbsp chopped dill plus 1 rounded tsp, 2 tbsp snipped chives, 2tsp chopped mint, 5 sheets of filo pastry, and 100g feta cheese. First, cook the spinach and squeeze out an excess water. Then use a kitchen paper towel to dry the spinach. Afterwards, roughly chop the spinach and set it aside. Second, heat 2 tsp of oil in a frying pan. Add shallot, spring onions and garlic until it starts to get brown. Add spinach and stir for one minute then season with pepper, nutmeg, and leave the mixture to cool. Third, heat oven to 190C. In a bowl, stir ricotta into the beaten egg and mix 2 tbsp of dill, chives, and mint. Fourth, spray a deep cake tin with oil. Lay the filo pastry sheet on the cake tin and brush a little bit of the dill oil. Fifth, stir the ricotta mixture into the spinach and crumble the feta into the mixture and lightly stir. Put the mixture into the tin and make it even on the pan. Spread a little bit of the oil and cover the mixture and the pan with the filo pastry sheet to give it a top.
