Second, heat 2 tsp of oil in a frying pan. Add shallot, spring onions and garlic until it starts to get brown. Add spinach and stir for one minute then season with pepper, nutmeg, and leave the mixture to cool. Third, heat oven to 190C. In a bowl, stir ricotta into the beaten egg and mix 2 tbsp of dill, chives, and mint. Fourth, spray a deep cake tin with oil. Lay the filo pastry sheet on the cake tin and brush a little bit of the dill oil. Fifth, stir the ricotta mixture into the spinach and crumble the feta into the mixture and lightly stir. Put the mixture into the tin and make it even on the pan. Spread a little bit of the oil and cover the mixture and the pan with the filo pastry sheet to give it a top.
