Beef Chuck Roast in a Pot

Servings: 2-3 | Prep Time: 15 minutes

Ingredients

• 1 lb. beef chuck roast, chopped into cubes
• 1 to 2 Tbsp. oil
• 8 oz. tomato sauce
• 8-10 oz. beef broth
• ½ lb. carrots, chopped into small cubes
• ½ lb. potatoes, chopped into small cubes
• 1 large onion, chopped into small cubes
• ½ tsp. garlic powder
• ½ tsp. salt, preferably kosher
• ½ to 1 tsp. smoked paprika

Cooking Directions

1. Pour the oil into the Instant Pot then press sauté. Toss in the beef cubes and sauté it until all sides are browned. Season it with some salt and paprika.
2. Add the tomato sauce and chicken beef broth.
3. Press the soup button then set the timer at 15 minutes.

• 8 oz. canned tomatoes, diced
• 1 cup beef stock
• Salt and pepper

Cooking Directions

1. Put the following in the Instant Pot: carrots, celery, potato, onion, garlic, thyme, bay leaf, beef, tomatoes, and beef stock. Mix everything then season it with salt and pepper.
2. Close the lid then set the pot to pressure cooking for 10 minutes.
3. After cooking, release the steam naturally.
4. Discard the bay leaf before serving. Enjoy!

Pinto Beans in an Instant

dried pinto beans, soaked in water for 15 minutes
• 1 ½ cups onion, chopped
• 1 jalapeno, seeded and roughly chopped
• 4 garlic, minced
• 1 ½ tsp. ground cumin
• 2 tsp. dried oregano
• ½ tsp. ground black pepper
• 3 Tbsp. oil
• 4 cups chicken broth
• 4 cups water
• 1-2 tsp. sea salt

Cooking Directions

1. Put the following in the instant pot: onion, jalapeno, garlic, cumin, oregano, pepper, oil, broth, and water. (Do not season it with salt just yet)
2. Strain the pinto beans then wash it in running water. Toss it into the pot with the rest of the ingredients.
3. Close the lid. Press Bean/Chili then set it to 45 minutes.
4. Once it is cooked. Release the steam naturally for about 15-20 minutes.
5. Open the lid then season the dish with some salt.
6. If you have an immersion blender, you can use it to puree the beans right in the pot. If you don’t, then you can just pour it in an ordinary blender to puree.
7. Serve and enjoy!
