Throughout my life, my friends and family call me “Chef Steve”. They call me this because I always end up cooking and revising my mom’s food. In my strong opinion, I know the extra ingredients to make the food taste more appetizing. With the right seasoning and amount that I put in the crawfish is as easy as learning how to breathe. My most wished for food of all time is garlic crawfish, not only because of the taste, but for the process of how its made. Every since the day I was interested in how to make it, i watched since then and eventually my parents allowed me to come up with my own process. With the way I personally like to eat my crawfish is that it has to be full of juice and flavour with the additional buttery, spicy seasonings. I would start off by going to the nearest local food market that sells crawfish by the sack. After arriving, i would then make sure they have a sack at least a 20 lb or higher, also known as the JUMBO size. If not, then it is not going to be worth your time and money at all. You would then need to examine the live crawfish, making sure they are all alive and looking fresh. If the crawfish looks not so appetizing and some of them look dead and broken then I would suggest you asking for another sack of jumbo size crawfish. So, what my mom and dad do first is to add about one-fourth of warm water in the pot then half of a gallon of sunny D which is added for a more flavorful taste to the broth. We will then need to add a ton of fire seasonings to this pot of broth. You will then need to add two to three, four inch jalapenos that are already cut up into pieces and ready to be tossed into the pot. That is going to be one of the main ingredients to a perfect broth. After that, it is essential to add half a bag of Zatarain's 5 lb crawfish seasoning which is required and fully recommended by not only me but most people who cook crawfish. Next step is to add three unsalted or salted butter sticks into the pot to give it that buttery flavour. In doing this, make sure you do not leave any paper residue on the butter stick. I would then add half of a 16 oz bottle of zatarain's oil, but it is completely up to you if you would like to add the whole bottle or not. Then, you would add about three tablespoon of pure white sugar that will bring a good sweet taste to the broth. We will now have to add one full thing of garlic clovers that is peeled and chopped up and thrown in the broth. While doing that, you will be also adding a few pieces of onions as your preference but I do highly recommend that you do. The final broth seasoning that I like to add is two tablespoons of paprika and chili powder each.
