Turkey Meatloaf

Meatloaf can include a plethora of difficult to find ingredients or be as simple as seasoning, meat, bread crumbs, and an egg. This recipe is obviously the latter kind but it is certainly not lacking in flavor. You might want to whip up two of these savory loaves so that you have extra for lunch the next day.

1 teaspoon olive oil
½ small sweet onion, finely chopped
1 teaspoon minced garlic
½ teaspoon grated fresh ginger
1 pound lean ground turkey
1 large egg
1 carrot, shredded
½ cup gluten-free bread crumbs
Pinch sea salt
Pinch freshly ground black pepper

Preheat the oven to 350°F

When these lamb racks come off your grill and you savor your first juicy bite, four star restaurant cuisine will come to mind. If you do not have a barbecue, broil the chops for 5 minutes per side in the oven.

8 lamb chops, about 3/4-inch thick and trimmed of fat
3 garlic cloves
1 tablespoon chopped fresh thyme
1 teaspoon chopped fresh rosemary
1 teaspoon lemon zest
Pinch sea salt
Pinch freshly ground black pepper
¼ cup olive oil

Place the garlic, thyme, rosemary, lemon zest, salt, and pepper in a blender and pulse until finely chopped.
Add the olive oil and pulse until a thick paste forms.
Place the lamb chops in a medium bowl and add the garlic paste.
Use your hands to rub the chops all over with the paste.
Cover the bowl and place it in the refrigerator so the chops can marinate for 1 hour.
Remove the bowl from the refrigerator and let the chops come back to room temperature, about 30 minutes.
Preheat a barbecue to medium-high.
Grill the lamb chops until desired doneness, about 4 minutes per side for medium-rare.
Let the chops rest for 5 minutes and serve 2 per person.
