In my family Christmas time is the best time of the year. We always gather together and celebrate with a big beautiful tree and great food. The one food that is always a must have is tamales. My great grandmother started this tradition in her house, located in Durango, Mexico, because it was the one and only food she could always get the youngest child to eat. The children always enjoy cheese stuffed tamales while the adults enjoy red pork tamales. While some food might have been cooked days before, the tamales are cooked the day of Christmas Eve and enjoyed fresh that night while we wait to open presents. There is always a lot of work to do but the tasks are separated among the women. The younger girls clean dishes and pass things from one girl to another. …show more content…
The pork is put in a deep saucepan, covered in water and added a pinch of salt. The pork should cook for about an hour and thirty minutes in simmering water over medium heat. While the pork is cooking corn husks are submerged in warm water for about an hour. Red chilies are toasted, red tomatoes are boiled, and onions are chopped than all three are placed in the blender with the water the tomatoes are boiled in and blended until they are a bright red smoothie. The pork is now taken out, deboned, shredded, and places on a skillet. The red chili smoothie is added to the pork and cooked over medium heat until the pork drinks up some of the red chili smoothie.
