Step 2:
Chop up your onion and garlic and throw it to the pot. Cook and stir this for about 6 minutes. You want it to be softened but not browned.
Step 3:
Next, cut your butternut into chunk and, add it to the pot, along with the stock and honey.
Step 4:
Bring the pot to a simmer and cook for 15 to 20 minutes, until the butternut is tender.
Step 5:
When the butternut is tender, remove the pot from the heat and allow it to cool slightly before blending everything with a stick blender.
Step 6:
Your delicious butternut soup is ready. Season with a sprinkle of nutmeg, salt and pepper. This soup is best served hot with a dash of cream.
