Facility Overview
Established in 1998 and originally conceived by famous Food Network Chef Michael Chiarello, Tomatina, is a modern restaurant that specializes in a wide variety of high quality Italian cuisine by emphasizing on fresh ingredients. Tomatina is a private company categorized under Restaurant, Family: Chain. It currently has five locations in the San Francisco Bay Area: Alameda, established in 2004, Dublin in 2006, San Rafael in 2010, Santa Clara in 2000, and Walnut Creek in 2001. Tomatina in Dublin has approximately 25-32 employees.

It has an estimated annual revenue of $2.5 to 5 million and they forecast these numbers on previous year sales. Since Tomatina managers expect to always be busy, they have determined that a weekly inventory on Thursdays is the best way to make sure that all of the employees have the items and ingredients necessary to do their job. Recommendation for improvement
During our visit, we noticed that Tomatina has a well distributed plan for duties in the front and back of the house. However, we observed that during peak times, the pasta, pizza and pantry stations were being overloaded with orders. We recommend them to schedule one person per station during rush hours. Hiring two more persons during peak times might seem as higher overhead, but making sure that the orders are served correctly and on time is very important for the guests. An efficient and on time service will increase the possibilities of returning happy customers.
Also a person in each station allows for proper scheduling of breaks and lunches. Happy employees are the key to proper functioning and development of new strategies. If the employee is under a minimal level of stress, he will be able to see the processes with much clarity and discover which one could be improved in less time; since in terms of quality, Tomatina has a well-established
