Recently, there has been an appalling number of people taking on the gluten-free lifestyle, due to an increase in sensitivities. This has become a large problem for Americans since manufacturers create wheat that is disease-resistant and so they can have larger yields.
A common misconception for gluten is that it is an allergy people can get, but really it is a physical condition in your gut. Undigested gluten proteins remain in your intestines and get treated as a foreign invader, so your microvilli (a microscopic membrane) in your small intestine wall gets flattened. When you lose microvilli it means there is less surface area to absorb nutrients from food. If you were to remove gluten from your diet, the gut would heal. It seems that gluten
