Some enzymes can work at different pH levels. Two types of enzymes that operate at pH levels different than peroxidase are invertase and pepsin. Invertase works best at the pH level of 4.5 and pepsin can work at a pH of 1.5-1.6 (Effects of pH 2016). Both of these enzymes have optimal pH levels lower than the pH level of peroxidase. One problem with this experiment is the time between mixing the enzyme and placing it in the spectrometer may produce inaccurate results. The time may be minuscule, but during this time the enzyme could have started reacting and this would result in a different absorbance number for the first data
