When the topic of health issues in America is brought up, our minds immediately go to the most talked up issues like diabetes, cancer, stroke, etc. A lot of the issues we see in our culture today are self-induced. For example, overeating can lead to obesity and undereating can lead to anorexia and both can turn into more severe health problems. What about the issues you can’t always see? Every year, foodborne illnesses have managed to sicken 48 million Americans (about 17% of the U.S. population) and lead to 128,000 hospitalizations and 3,000 deaths. (Healthy People, 2014). Since there is such a high risk with the foods we consume, food safety policies and programs have been put into place to ensure the safety of the products the public is consuming. So what is food safety and why is it so important? If you have ever eaten at a restaurant your entire experience is related to food safety. The table you have been sat at has been sanitized for your safety, the medium-rare steak that has arrived to your table has been cooked at the proper temperature to kill bacteria, and the waitress returns to the table with clean hands to deliver your check right before you depart. Every step of your meal has been monitored and policies have been implemented so you may enjoy a clean meal. Let’s say you went out to eat and the table was dirty, your food came out raw, your waitress coughed in her hand, and you left with a stomachache days after the visit. You have now contracted a…
