Explain the influence of geographical regions on food choices
People tend to eat the foods that are available to them. People in the South tend to eat more fresh fruits and vegetables. Many large cities have smorgasbords and Chinese restaurants. Regional dietary customs have become much less defined in recent years due to the growing influence of fast-food chains, rapid transportation systems, and relocation of people to other areas.
Identify common dietary practices of several ethnic groups.
Black: fish, chicken, pig, greens cooked with fatty meats, okra, corn, tomatoes, sweet potatoes, grits, rice, yams, biscuits, corn bread, high levels of sweets.

Mexican: Beans, steamed rice, corn products, chili peppers, stewed tomatoes and tomato puree, potatoes, meat and sausages, fish, poultry, eggs, milk custard, bread pudding, lard, sweet chocolate, coffee drinks

Chinese: rice and rice gruel, wheat noodles, cabbages, squashes, cucumbers, eggplant, leafy vegetables, bamboo, soy, sweet potatoes, radishes, onions, peas and pods, mushrooms, roots, tofu, bean noodles, pork, chicken, duck, lamb, sugar

Middle Eastern: Lamb and goat, bread, rice, beans, lentils, yogurt, feta cheese, olives, tomatoes, and olive oil.

Islam: Similar to Jewish Kosher laws. No alcoholic beverages are allowed, tea is permitted. Muslims fast for a month each year, avoiding food from dawn til after dark. Honey, dates, milk, meat, seafood and olive oil

Judaism: Strict dietary laws for Orthodox Jews. Prepare and serve meats and dairy foods in different dishes. Meat and dairy may not be eaten together. Pork products, rabbit, shellfish and scavenger fish are not allowed. Certain days of fasting are observed.

Morman: Use no stimulants. Fast for two meals on the first Sunday of each month. Meat is eaten sparingly and in season.

Roman Catholic: Abstain from eating meat on Fridays, especially during Lent. Do not eat or drink water for 1 hours before fasting.

A family's financial status may influence a person's eating habits. Food is relatively inexpensive in the US. More affluent people tend to eat at restaurants more often. They generally consume more vegetables and fruits but also eat more fat due to a higher intake of cheese, meat, fish and poultry. Diets higher in fat are associated with heart disease, cancer, and other disorders. When income rises, people tend to eat fewer eggs, rice and beans. People with lower incomes may skip meals. Homeless may beg or look through trash for food.

Kosher
Orthodox Jews follow dietary laws: separate dishes, pans, and silverware are used to prepare and to serve meat and dairy products. Meat and dairy may not be eaten at the same meal. Meats must be slaughtered by a ritual method and only the front quarter of the animal may be eaten. Some parts of beef, veal, lamb, mutton, goat, venison, chicken, turkey, goose and pheasant are eaten. Pork products, rabbit, shellfish, and scavenger fish are not allowed. Food must be prepared ahead of time for the Sabbath, which is sundown Friday to sundown Saturday. Certain days of fasting are observed, but a rabbi may excuse older or ill clients.
