Introduction
In today’s world, sugar is a common ingredient in a person’s diet. According to a Forbes study in 2012, the average American adult consumes one-hundred thirty pounds of refined sugar per year (Walton, 1). Prior to sugar, honey was used as a primary sweetener. Honey does not have a consistent flavor because bees use local flowers in making their honey. Honey’s flavor can range from sweet to bitter, depending on the flowers available in a local area. In the Americas, prior to the arrival of sugar, syrup from maple trees or fruit was used as sweeteners. Sugar was appealing to people because it had a sweeter taste than anything available at that time (Aronson, 7). The process of creating sugar and the desire people had for it brought about the Age of Sugar. During the Age of Sugar, different cultures came into contact with one another, the basis of humanity, “that all men are created equal”, was challenged, and science was used to find solutions to problems that the desire for sugar created.

The word khanda comes from the ancient Indian language of Sanskrit and is used to describe sugar crystals. The word khanda was later translated to the modern day word
