The rebellion appears to be similar to the American Revolution, except not stopping at liberating New England, but moving on to remove England's control from any nation that was under it, including Briton. The goal of the Rebel alliance was not order, as that already existed under Palpatine's rule, and the only thing disturbing that was the rebellion. So what was the point? Why would you fight to reinstate a government that couldn't even remove known separatist supporters from the senate? One could argue that the inability to accomplish simple tasks within the republic was due Palpatine's manipulation, but we know by observing our own government that you don't need someone with mystic powers to grind a senate meeting to a halt. All you need is a few people who benefit enough themselves, and they'll push their agenda to the end of time. Darth Sidious destroyed an ineffective system, and replaced it with a productive police state, while at the same time getting rid of an ultra-conservative religious faction.
