What is Methode Dioise? Where is it practiced?

Variation on methode ancestrale and transfer method. Base wines are slowly fermented in stainless steel then filtered and bottled without dosage where they ferment to 7.5% before being disgorged and filtered into new bottles.

What is mutage?

The process of stopping a must from fermenting, usually by adding alcohol (sometimes by adding sulfur)

What is encepagement?

Term that describes the mix of vine varieties planted on a particular property.
