Shigella spp.

Found in human feces with illness. Happen when people eat/drink cont. food or water. Bact. in feces weeks after symptoms have ended. Linked to cont. TCS foods and produce. Bloody diarrhea, Abdominal pain and cramps, Fever (occasionally)

Illness: Shigellosis

Salmonella Typhi

Only lives in humans, carried in bloodstream and intestinal tract. Linked to RTE foods and Beverages. Symptoms inc. High fever, weakness, abdominal pain, headache, loss of appetite, rash

Illness: Typhoid fever

Nontyphoidal Salmonella

Carried by many farm animals naturally. Linked to poultry and eggs, meat, milk and dairy products, produce such as tomatoes, peppers and cantaloupes. Symptoms include diarrhea, abdominal cramps, vomiting, fever.

Illness: Salmonellosis

Shiga toxin-producing Escherichia coli (STEC) E. Coli

Found in cow intestines, and infected people. Cont. Meant during slaughtering. Liked to ground beef(raw and undercooked) and cont. produce. Symptoms: diarrhea (eventually becomes bloody), abdominal cramps, kidney failure (in severe cases)

Illness: Hemorrhagic colitis

Hepatitis A

Mainly found in feces of people infected with it. Linked to shellfish from cont. water and RTE foods. Symptoms: fever (mild), general weakness, nausea, abdominal pain, jaundice (appears later)

Norovirus

Very contagious. Linked with RTE foods and shell fish from cont. water. Symptoms: vomiting, diarrhea, nausea, abdominal cramps.

Illness: Norovirus gastroenteritis
