Food and Drug Administration FDA

Several government agencies take leading roles in the prevention of foodborne illness in the United States. The FDA inspect all food except meat, poultry, and eggs. And also regulates food transported across state lines.

US Department of Agriculture USDA

The US Department of Agriculture regulates and inspects meat, poultry, and eggs. The USDA also regulates food that crosses state boundaries and involves more than one state

FDA Food Code

A science-based code providing recommendations for food safety regulations. It was created for city, county, state, and tribal agencies. These agencies regulates food service for the following groups:


Restaurants and retail food stores


Vending operations


Schools and daycare centers


Hospitals and nursing homes

Centers for Disease Control and Prevention CDC

Are agencies of the US Department of Health and Human Services. They assist the FDA, USDA, and state and local regulatory authorities by providing the following services:


Investigate outbreaks of food borne illness


Study the causes and control of disease


Publish statistical data and case studies in the morbidity and mortality weekly report MMWR


Provide educational services in the field of sanitation


Conduct the vessel sanitation program - an inspection program for cruise ships

Public Health Service PHS

PHS like the CDC the Public Health Service also assist the FDA, USDA, and state and local regulatory authorities. They conduct research into the causes of foodborne - illness outbreak. They also assist in investigating outbreaks

Food codes

Regulatory authorities write or adopt Food codes that regulate retail and food service operations. Food cause me different from the FDA Food Code, because these agencies are not required to adopt it. In fact Food Code differently from one state or locality to another.

Health inspectors

State and local health inspectors also called sanitarians, health officials, or environmental health specialists conduct restaurant and food service inspections in most states. Most are trained in food safety, sanitation, and public health principles
