What is the traditional method of French Champagne? |
1. Primary fermentation brings a highly acidic wine, usually around 11% alc. (In Stainless or oak, while most oak is old)
2. (Optional) Malolactic fermentation. (Required) Wine is then clarified.
3. Wine then stays in stainless or oak until Feb or March of following year. This is when blending, if done, happens.
4. Each bottle is affixed with a crown capsule, or a cork after the liquer de tirage is added and the yeast goes to work. Second fermentation, called prise de mousse.
5. Second fermentation takes place over eight weeks, bottles then enter sur latte period.
6. Autolysis occurs, forming sediment. Bottles sit on their Lees (12 months for NV).
7. Lees removed through degorgement. |
