I couldn’t stop thinking about what just happened, what did I just do, and did this really just happen to me? My lungs began to tighten up as I began to cry out of fear. Knowing that my parents were back in Arizona and I was there all alone with no family.…

It was one of those memories sitting in my brain, gathering dust. However, it was also that memory that would come to define an important aspect of me: persistence. When I was in fourth grade, I had volunteered at the 2006 San Francisco Marathon with my mother and brother. All I did was hand cups of water to the people that passed by and stand mesmerized by the sheer number of runners. However, within a few hours, my young self quickly grew bored, and the marathon went from interesting to tedious.…

It is not Chipotle, but it will have to do. Everyone has had this thought at the end of the month when the money to spend on takeout has run out and now we are stuck settling with eating in the dining hall that we are forced to pay a ridiculous amount of money for. On the first tour of Baylor’s many dining halls they had put out the superior delicious food, I guess that must be kept in the back now. Back then it seemed as if there was an edible choice for anyone and everyone; including vegans, and the freshman fifteen seemed inevitable. Having been here now for almost a semester the façade of the likelihood of delicious vegan meals had faded long ago.…

My usual food intake pattern is pretty regular for the most part, although it slightly fluctuates from time to time. My typical day starts out around 8a.m. with an 8-12oz cup of black coffee and some days I will add two tablespoons of French vanilla creamer. If I find myself still hungry after a cup of coffee, I will eat one cup of Special K cereal with about ¼ cup of 1% milk. I wouldn’t say I am much of a breakfast person, though I do enjoy it from time to time. Around 11:30 a.m.…
