Through interactions with fellow garden volunteers, I have learned about food culture in Cambodia, Mexico, and China in particular. For example, a volunteer in the garden shared about her home village in China where sweet potato leaves are harvested and eaten. There is an important connection between food culture, nutrition, and community gardening. Building on my experience, I researched methods, resources, and considerations for community garden development for my Honors Scholar Program Capstone. I also joined the Hunger and Environmental Nutrition Dietetic Practice Group to learn from dietitians in the sustainable food systems area of the profession. As a registered dietitian nutritionist, I hope to continue to learn from individuals of diverse cultures to establish sustainable food systems. My short-term goal is to continue to support community gardens. My long-term goals are to influence policy regarding sustainable food systems and connect people to growing food in their community. With my interests, I plan to continue my education with a Master of Public Health or Master of Business Administration including an environmental or sustainability focus. Completing various roles simultaneously throughout my undergraduate education required me to build strong time-management skills. I am well prepared to manage the graduate course content and supervised practice components of the Bastyr Dietetic Internship. The unqiue learning outcomes of nutrition care that incorporates whole foods, complementary medicine, and environmental considerations corresponds with my specific interest in growing food and sustainable food systems.
