Botrytis have wather-sucking role and concentrating sugar and acid in grape and create new flavour to wine (orange-marmalade) and more complexity. High concentration of sugars put this wine in sweet wines group. Yeast will completly be spend before all sugar is transformed to alcohol. Noble rot do not infect completely whole bunch, so it will be need to do several harvest by hand picking which is affect to price.
