I'm a guest at the Bah. Name and describe three classic oyster wines.

Chablis - citrus and mineral

Sancerre - herbaceous, cut grass, lime zest

Muscadet - saline, citrus, white fruits

Champagne (BDB) - lean with persistent effervescence

Assyrtiko - smoky, salty, high acidity

Sell me a funky red...

Looking for flavor, texture, tannin and what it would pair well with.

What are three low tannin reds on our list?

La Boutanche Gamay, Brooks Runaway Red PN, Evesham Wood Illahe PN, William Hill Merlot

Compare and contrast Love Drunk vs Jolie Folle

Love Drunk is more bright, higher acidity, more tart red fruit, and has a longer finish.

Jolie Folle has more ripe fruit characteristics of watermelon, strawberry, raspberry, more full mouthfeel and shorter finish.

How does LaHerte Freres differ from a majority of Champagnes?

Made from 60% Pinot Meunier - more rich and toasty. Nutty too!

TTOPP on Cristom Pinot Gris

Taste/Aroma: yellow apple, cotton, slate, orange blossom

Texture: weighty and a touch oily (viscous)

Origin: Eola-Amity Hills Southern part of the Willamette Valley, Oregon

Preparation: all stainless steel fermented - no oak - texture comes from lees ageing

Presentation: well chilled, 6 oz pour

How would you describe our wine list to a guest?

No wrong answer - looking for a couple things. 30 or so btg, white focused, rose year round, all chosen for seafood.

Why should I spend $20 on Evesham Wood when the Brooks is $14?

More dark fruit character and spice. Deeper concentration of flavor.

Isn't all prosecco, rose, riesling, etc, sweet? How do you convince someone to drink these wines they have preconceived notions?

NO! Dry expressions of these wines offer complexity not found when RS (residual sugar) is left in the wines. Try them! We have all open to taste!

What's your favorite non traditional pairing?

A couple of mine: Grignolino and salty oysters, LaHerte Freres Champagne and fried chicken, Guiberteau Chenin and clams, La Boutanche and octo, Rombauer and middle aged women, Niepoort Docil and west coast oysters
