What is Whiskey?

The distilled product of fermented gains, including malted and un-malted barley, maize, rye, oats, and wheat.

Describe the Malt Whiskey production.
|
Barley is malted by steeping it in water and then spreading it out on a concrete floor in a warm atmosphere. The grains germinate, converting starch to sugar. Germination is stopped by heating the grains over a peat fire; peat smoke adds flavor. Malt is cracked and added to boiling water in a mash tun, where sugars and flavors are extracted. The liquid ("wort") is drawn off and fermented with the addition of yeast. This wash is then twice distilled in a pot still.

Irish Whiskeys are typically lighter in style, since peat isn't used. Examples are Old Bushmills, Cooley, and New Middleton (maker of Jameson). Irish Whiskey must be aged for a minimum of three years.
