What is Carbonic Maceration and what region Is It typically used?

Carbonic Maceration is a wine making progress where whole bunches of grapes are placed in a vat and carbon dioxide is added .Fermentation happens when the grapes at the bottom of the vat are crushed by the grapes at the top of the vat.As more carbon dioxide is released by the fermentation, It envelops the whole grapes at the top of the vat .Eventually the grapes burst releasing more juice until the fermentation of all grape sugars is complete and the wine is pressed.


AOC Beaujolais Nouveau is made with this method and is quickly produced over 7-9 weeks , and is used to celebrate the French harvest each year.

What is Saignée and what is the purpose of it ?

Saignée is a wine making process also known as ‘bleeding ‘This method produces Rosé wine as a byproduct of red wine production .If the wine maker wants to impart more tannins or strong flavors to the red wine , he/she can ‘bleed off’ some of the pink colour during the early stages of fermentation.This increases the grape solid to juice ratio, producing a more vibrantly coloured and strongly flavored wine

Basically Sulphur keeps the wine fresh.
