Why is water an important 'Metabolite'?

Water is polar, so their slightly positive and negative ends attract ions so the ions will get totally surrounded by water - dissolves. |

Lots of heat is used to change it from a liquid to a gas. |

Water takes longer to heat up due to the specific heat capacity in hydrogen bonds. So less heat energy is available to increase water temperature.
