"Holy Wine" is a high alcohol, almond-and honey-toned dried grape wine produced from Trebbiano and Malvasia grapes. The grapes are hung from rafters to dry, usually until December 1st. A period of slow fermentation between 3 and 8 years. Oxidation occurs and the alcohol is concentrated through evaporation and wine gains its characteristic amber hue.
