PINA COLADA

2oz Light Rum


1.5 oz Cream of coconut (homemade...)


1.5 oz Pineapple Juice


.5 oz Lime Juice


Garnish with a pineapple leaf and a bouquet of mint



Combine all the liquids and whip shake before dumping into an hurricane glass filled with crushed ice.

ZOMBIE

Smugglers Cove Recipe:


1.5 oz Blended Aged Rum


1.5 oz Column Still Aged Rum


1 oz Overproof Rum


.75 lime juice


.5 oz Velvet Falernum


.25 grapefruit juice


.25 cinnamon syrup


1 tsp grenadine


2 dashes Herbstura (equal parts Angostura Bitters and Absinthe)



Whip shake before dumping into a hurricane glass filled with crushed ice. Garnish with a mint bouquet.

PAINKILLER

2 oz Navy Strength Rum


2 oz pineapple juice


.75 oz Orange Juice


.25 oz Lime Juice


.75 oz Coconut Cream



Shake and strain into a hurricane glass filled with crushed ice. Garnish w nutmeg, orange & cherry flag.


I’ve seen a recipe to dry shake then pour over ice.

MISSIONARY’S DOWNFALL

1.5 oz Blended White Rum


.5 oz Peach Liqueur


1 oz Lime Juice (maybe less)


5-6 cubes of fresh pineapple


.5 oz honey syrup (3:1)


10-12 mint leaves



Place pineapple into a mixing tin and muddle. Slap and add mint then the liquids. Shake with ice and strain either into a chilled coupe (so double strain) or into a Collins glass filled with crushed ice. Garnish with mint.

SATURN

1.5 oz dry gin


.75 oz lemon juice


.25 orgeat


.25 falernum


.25 passion fruit syrup



Blend with .5 oz crushed ice then pour into rocks glass filled with crushed ice. Garnish with long lemon zest wrapped around a cherry to look like Saturn and its rings.

MAI TAI

2 oz rum (usually a blend...)


1 oz lime juice


.5 oz orange curaçao


.25 oz orgeat


.25 oz rich simple



All in a shaker with ice (4 Kold Draft). Shake and strain into a rocks glass filled with crushed ice. Mint bouquet garnish (maybe lime zest and orchid)

JET PILOT

1oz Jamaican Rum


.75 Gold (Puerto Rican) rum


.75 Overproof rum


.5 oz lime juice


.5 oz grapefruit juice


.5 oz falernum


.5 oz cinnamon syrup (maybe less)


2 dashes absinthe


1 dash Angostura Bitters



Blend with 8oz crushed ice. Pour into a Hurricane glass and garnish with a cherry.

BLUE HAWAIIAN

1.5 oz light rum


.75 oz blue curaçao


.75 Cream of coconut


3 oz pineapple juice


.5 oz lime juice (sometimes lemon)



All into a blender with 6oz crushed ice and poured into a Hurricane glass. Can also be shaken and strained into a crushed ice filled glass. Pineapple wedge, cherry & umbrella garnish.


Basically a blue pina colada...

SUFFERING BASTARD

1 oz dry gin


1 oz brandy (I’ve seen bourbon)


1/2 oz lime juice


.25 oz rich simple syrup


2 dashes Angostura Bitters


4 oz ginger beer



Pour ginger beer into a Collins glass. Shake the rest of the ingredients with ice and strain into the glass. Gently fill with cubed or cracked ice. Garnish with mint and swizzle stick



Another technique is to put half the ginger beer in at first and the top with the rest when finished.
