Whites: night harvest, selection tables, cold maceration, temperature controlled fermentation are common.

Wine styles
White |
- Traditionally, sup-Sherry type wine; Vino Generoso. Using Palomino Fino and/or Viura. There are still some flor-influenced wines made.
- Modern wines are made from Verdejo; varietally or blended w SB. - Elegant, aromatic wines w crisp acidity; peach, melon flavours from SB and Viura. |

- Red wines are modernly made; Ribera del Duero style:
- grapes destalked --> fermented - free-run wine tapped off - rest pressed - press-wine added to the free-run wine for final blend. |

History
|
- 11th: first evidence of winemaking.
- 18th: Verdejo cultivated. - 1890: Phylloxera destroyed 2/3 of vineyards. - 1972: Marques de Riscal (Rioja) established here to produce aromatic white wines. --> result 1980 DO. |
