Wine: 2018 SCHNEIDER & BIELER Cabernet Franc ‘Empire”; FingerLakes, NY Grapes: 100% Cabernet Franc Fruits: Fresh red fruit, raspberry, tart currants Other: savory herbs Fun Facts: Bruce Schneider has been crafting acclaimed NY StateCabernet Franc since 1994 and when he teamed up with CharlesBieler in 2010 to start Gotham Project, naturally the first red winethey kegged was a NY Cabernet Franc. 100% Cabernet Franc fromthe Wagner Vineyard on the East side Seneca Lake and SheldrakePoint Vineyard on the West side of Cayuga Lake. Fermented with RC212 yeast the must was heated to 90 degrees F at the start offermentation. Temperature was held for 24 hours resulting inaromas and flavors of fresh raspberries complimented by notes ofsavory herbs. The wine was aged for 8 months in seasoned Frenchoak before being kegged. Packed with classically fragrant CabernetFranc character, this wine delivers red cherries and tart red currantsaccented by savory tones and mouthwatering acidity. |
