What are the two main considerations in the storage of sake? |
Heat and light? |

Amino acids and vitamins react with light to create unpleasant aroma's/degrade flavours. Can smell like burnt hair/flesh! |

1-2 weeks with very little degradation |

What is Nama-hine? |
A type of bacterial spoilage that happens in Nama-zake. Can cause aroma's of bacon,malt and hazlenut. Some are brewed to display this and some enthusiasts specifically aim to achieve this. Sometimes this sake is nicknamed Nama-juku (matured nama) |

Nickname for Nama-zake that has developed pleasing levels of name-hine. |
