What is the expected aroma of old ale?
malty-sweet w/ fruity esters, often complex w/ dried fruit, vinous, caramelly, molasses, nutty, toffee. Some alcohol/oxidative notes acceptable (similar to sherry or port). Generally no hop aroma due to aging.
What is the expected appearance of old ale?
Color: light amber to very dark reddish brown (most fairly dark); may grow darker with age
Opacity: clear or almost opaque
Head: moderate to low cream- to light tan-colored; may be adversely affected by age.
What is the expected flavor of old ale?
Low to None: diacetyl
Medium to High: malt character--luscious malt complexity, often nutty, caramelly and/or molasses (light chocolate/roasted malt optional but not prominent)
Balance: malty-sweet; possibly well-hopped
Medium to High: fruity esters (dried fruit or vinous)
Finish: dry to somewhat sweet
Alcohol: evident but not overwhelming
Optional: wood-aged/blended versions may have lactic or Brettanomyces character (should not be too strong)
