1. aflatoxin
2. antitrypsin
3. goitrogen
4. solanine
5. oxalic acid
6. benzopyrene
aflatoxin
moldy peanuts
-liver damage
antitrypsin
raw legumes
-blocks protein digestion
goitrogen
cabbage
-blocks thyroxin synthesis, suppresses function of thyroid gland by interfering with iodine uptake- can result in enlargement of thyroid
solanine
sun-burned potatoes
-vomiting and diarrhea
Oxalic acid
rhubarb, spinach, chard, beets
-restricts calcium absossrption
-gritty mouth feel when drinking milk
Benzopyrene
hydrocarbon, charcoal-broiled meats, fish
-carcinogen, incomplete combustion
Mycotoxins from Molds
belong to group Deuteromycetes (imperfect fungi) produced under cold and damp conditions
-found in rye, wheat, barley, oats, usually removed by milling
Gangrenous ergotism
burning sensation of feet and hands, develops into loss of circulation, limb amputation

toxin similar to LSD, hallucinations, convulsive seizures
