Rails are horizontal like a chair or hand rail and stiles are vertical frame around glazing.

Cladding with vinyl or aluminium on exterior gives wood finish on interior while exterior is maintenance free exterior.

To keep the joint tight and prevent opening up if the wood shrinks or the building moves.

Why should you not paint the exterior side of a steel insulated door a dark colour?

The heat from the sun could cause the laminate to warp possibly separating from the foam core.
