Happy's take on Grandma's chicken soup homemade chicken stock, diced carrots, onions, celery, leeks, mushrooms, chicken breast...what makes it international and non-demominational, tiny, tender matzah balls (matzah meal, selzter, chicken fat AKA schmaltz, onion, egg) as well as Frigola (toasted semolina pasta from Italy similar to cous cous) and basmati rice.

Petra's Super Mac N' Cheese with Bacon, peas, and jalapenos
Petra is Micheal's stepdaughter and she, like many of us, beleives that bacon makes world a better place. We take elbow shaped pasta, mix it with our cheese sauce (bechamel, american, montery, and parmigiano cheese) and then tossed in smoked bacon, fresh peas, sliced jalapenos and then topped it with toasted crushed panko bread crumbs.

Garnished with scattering of brunoise green peppers (mixed greens bell peppers and jalapeno) and shards of crispy bread

This dish is inspired by the Portuguese of Fall River MA. OO and garlic are sauteed in a pan, then we add onion, fennel, sliced chorizo (sausage spiked with smoked paprika) and some tuscan kale, clams, muscles, shrimp, calamari, and scallops...add a little white wine, oregano, thyme, a little chicken stock and a splash of tomato and allow this to cook all together until the clams just being to open. Add some dices blanched potatoes and garnished with parsley
