What are vitamins?
Organic compounds in the human body that act as catalysts to start/stop/slow/speed chemical reactions in the body.

Organic means they have Carbon.
What are the Fat Soluble vitamins?
Vitamins A, D, E, K
What are the water soluble vitamins?
Vitamin B Complex and Vitamin C
Explain the main differences between fat-soluble and water-soluble vitamins.
Fat soluble vitamins:
- can be stored in body fat
- may cause toxicity becasue they deplete slowly from the body (especially Vit A)
- Inject into muscles

Water soluble vitamins:
- Cannot be stored in the body
- Excess will be excreted in the urine adn so it is easy to become deficient in Vit B and C
- Inject into fat (sub Q)
Causes of vitamin deficiency diseases
-Too few vitamin-rich foods in the diet
- Inability to uptake from storage in body
- Poor absorption from the GI tract
- Loss from vomiting or diarrhea

Dehydration causes poor circulation of water soluble Vitamins B & C
What problem is folic acid deficiency associated with during pregnancy?
Neural tube defects in developing fetus
(occurs during 1st 2 weeks)
What is an antioxidant?
A substance which prevents cell breakdown (oxidation) such as the skin/fat breakdown that causes wrinkles.
Which vitamins and minerals are antioxidants?
Vitamins A, C, E and the minerals Zinc and Selenium.
Anemia
Low iron causes the body to not produce enough RBCs
Pernicious anemia
The body can't make enough RBCs becuase it doesn't have enough Vit B12
Beriberi
Nervous system ailment caused by a deficiency in vitamin B1 (thiamine)

Weight loss, emotional disturbances, impaired sensory perception, weakness and pain in the limbs, irregular heart rate
Pellagra
Disease caused by a chronic lack of B3 (niacin)

diarrhea, dermatitis, dementia, dementia, and death
Rickets
Softening of bones caused by vitamin D deficiency

Bone pain, dental problems, increased fractures, skeletal deformity (bowed legs, lordosis)
Scurvy (scrofula)
Caused by a lack of vitamin C (necessary for collagen formation)
