What is St.Lous Style?
The St. Louis style Rib is cut from the whole Spare Rib, which comes from the belly of the hog. It has the breastbone and Rib Tip removed. They are very meaty and much larger than Baby Back Ribs. A typical slab of St.Louis Style Ribs averages 2 1/2 lbs. before cooking. We season our Ribs with Dave's special seasoning blend and slow smoke them with real Hickory wood. After the Ribs are smoked and tender we grill them over an open flame and slather them with our Award Winning Rich & Sassy BBQ sauce.
What are Baby Back Ribs?
Baby Back Ribs are cut from the Pork Loin, which comes from the back of the hog. The bones are small and the meat is very tender and succulent. The Baby Back slab averages 1.75 lbs. before cooking. We hand rub our Baby Back Ribs with Dave's special seasoning blend and slow smoke them with real Hickory wood. Once the ribs are smoked to perfection, we grill them over an open flame and slather them with our Baby Back BBQ Sauce.
What are Rib Tips?
The Rib Tip comes from the Spare Rib. They are the small, meaty end pieces that are removed during the process of cutting a St.Louis style rib. They are seasoned with Dave's special seasoning blend and slow smoked with real Hickory wood, grilled and slathered with Rick & Sassy BBQ sauce at the point of sale.
What is "Memphis Style"?
This style includes a scoop of Coleslaw on top of the meat. Most often added to sandwiches, it can also enhance any entree. A great up-selling opportunity.
What is Texas Beef Brisket?
The Brisket is the cut of meat that comes from the chest, or lower front quarter of cattle. There are 2 types of Brisket from this cut. The "flat" is very lean, while the "point" or "deckle" is very well marbled, and is preferred by many BBQ aficionados. Our smoking process takes 2 hours for every piece of meat. Our Brisket is thinly sliced for platters and chopped into small "shingles" for sandwiches.
What is Georgia Chopped Pork?
Pork Butt, Boston Butt, and Pork Shoulder are the same cut. It is the front shoulder of the Hog, not the rear as you may thing (the rear is called a Ham). Pork Butts are seasoned with Dave's specail seasoning blend and slow smoked with real Hickory wood for 5 to 12 hours (dependant on the smoker type). After the Butts are "fall apart tender" we remove much of the fat and coarsely chop the meat for serving.
What are onion strings?
Yellow Onions cut into thin strings then coated in a hand-made mixture of flour, milk, and Cajun seasoning, the fried until golden brown.
What is the praline sauce?
A thick, sweet sauce with; sugar, whipping cream, cinnamon, butter, vanilla, sour cream, and pecans. Our Praline Sauce is heated at the Point of Sale and drizzled over Bread Pudding. I can also double as topping for our Famous Sundae.

What is the Rich & Sassy sauce?
Dave's Award-Winnin' granddaddy of BBQ Sauces. This tomato-based sauce has a medium level of spice,sweetened with molasses and pineapple. This is the sauce we slather on all our Ribs and Chicken.
What is the Georgia Mustard Sauce?
This sauce is a vinegar-based mustard barbeque sauce. Perfect with our Chicken or Pork and darn good for dipping fries.

Cajun Seasoning, Chipotle peppers, Capers, onions, and Mayonnaise. Is similar to a tartar suace, but with added spice.
