What is Vodka?

- a neutral spirit


- distilled to a minimum of 96% (EU)


- highly rectified,


- and often filtered,


- has few characteristics of the base material in the finished product

If grain is used, production of vodka is similar to...

- whisky production


- grain is ground,


- mixed with water to make a mash,


- cooked under pressure to hydrolyse the starch

- or added after cooking to aid conversion (or can add straight enzymes)


Fermentation usually is...

- relatively quick, around 40 hours


- result is 6-10% abv, strength depends on sugars present in base ingredient

some use pot stills ex: ketel one (dutch for pot still one) 100% wheat uses a proportion on the second distillation

Water is important because...

- end goal is to have as few congeners as possible


-therefore contamination must be avoided at all costs


- de-ionised, softened, and demineralized water is used


- this is opposite to scotch whisky, as characteristics of the water are hidden by congeners, peat, and oak.

and it is also important because...

- 40% of the liquid in vodka is water that has been added after distillation,


- more than almost any other spirit


- almost all vodka is unaged, can pick up on quality


-Absolut ages a portion of the final blend

What other things can be done to distinguish vodkas?

- add low strength spirit to final blend (like rum)


- add glycerol for mouthfeel


- polish vodka distillers distill to a slightly lower level to maintain some base material character

filtration?

- chill filtration is popular, makes product crystal clear


- carbon filtration popular (smirnoff) was necessary when distillation was less efficient to remove fusel oils


- finlandia and absolut don't filter


- multiple filtration possible (crystal head vodka filtered 7 times, 3 times through herkimer diamonds)


100% malted barley is rarely used

because it is not cost effective


If Vodka is made with potatoes, they are cooked to the point of a mash

when enzymes are added to aid conversion from starch to sugar

Wheat Vodka:

vinous texture


sweet midpalate


finish dry


with hint of anise

Rye Vodka:

soft clean spirit


citrus aromas and flavours


oily


with a zesty spicy finish

Barley Vodka:

low in oil,


therefore have a tendency to be lightest in style


ex: Finlandia Vodka

Potato Vodka:

lower yielding than grain


lower levels of congeners


high levels of methanol, therefore need to run spirit through a demethylizing column


full bodied

Soft and delicate
