Corvina

Black skinned grape, the name comes from how black the grape is Italians call it "corvo" (crow) parentage its still not confirmed but one of the parents is "refosco dal peduncolo rosso" mainly from veneto in italy. Small berries, thick skinned, resistant to rot, winter colds, high vigor grape.

Possible botrytis aromas highly volatile acidity, floral roses , dried flowers, spices licorice, cinnamon, other honey , chocolate, leather, tabacco , bitter almond , smoke, tar , oak large neutral cask , ( new producers might include new oak )

Corvina

Structure dry to off-dry full body ,elevated tannins and acidity, high alcohol. Covina- dominated blends are produced by the appassimento process, where they harvest the grapes and let them dry out until January so the sugar can become very concentrated.
