Approved suppliers

Food must be purchased from approved suppliers. These suppliers have been inspected and can show you an inspection report. They also meet applicable local, state, and federal laws.

Key drop delivery

Foodservice operations that receive food after-hours when they are closed for business. The supplier is given a key or other access to the operation to make the delivery.

Must be inspected. From an approved supplier, was placed in correct storage location, has not been contaminated and is honestly presented.

Shellstock identification tags

Food items must be delivered w/correct documents. Shellfish must be received w/ tags (shellstock identification tags) to indicate when and where the shellfish was harvested. They must be kept on file for 90 days from the date the last shellfish was used from its delivery container.

Inspection stamp

Carcasses and pkgs of meat that have been inspected will have this stamp with abbreviations for "inspected and passed" by the inspecting agency, along with a number identifying the processing plant.
