What is the significance of Delamotte?

Sister winery to Salon. Delamotte is the 5th oldest house in Champagne, formed in 1760. Rumor has it when Salon doesn't produce vintage champagne all the wine goes to Delamotte.

Tell me about the Krug "Grand Cuvée". Sell it.

In a region known for expert blending of base wines and reserve, Krug is king. Each of nearly 200 parcels is vinified separately and expertly blended with up to 50% reserve wine spanning back 20 vintages. Base wines are all fermented in 205L cask. Malolactic may or may not occur depending on vintage. It is not encouraged.

Today, it is run side-by-side with Delamotte. It is said that vintages in which Salon is not produced go to Delamotte's production. 10yrs lees aging before release.

Name vintages that Salon has released going back to 1980.

2007, 2006, 2004, 2002, 1999, 1997, 1996, 1995, 1990, 1988, 1985, 1983, 1982, 1979

When was the first vintage of Dom Perignon? Who was Dom Perignon?

1936 was the first vintage of Dom Perignon, produced by Moët & Chandon. Rosé versions have since been introduced. It is named after the Dom Pierre Perignon of the Abbaye de Hautvillers in the Valle de la Marne. While the story goes that Dom Perignon discovered sparkling wine after a stuck fermentation when winter weather got too cold. The wine began fermenting again in the Spring and many bottles burst, leading him to call the wine "The Devil's Wine". However, upon tasting the unbroken bottles he uttered the phrase "Come quick, I am drinking the stars!". All this is most certainly hyperbole. It is more likely that sparkling wine was created in Limoux by the Abbey St. Hilaire or the British as an offshoot of cider production.

Who produces Cristal? What is its significance?

Produced by Louis Roederer. Still a family owned house and all grapes in Cristal are produced by Roederer owned vineyards. Something that Dom Perignon and Krug cannot say. It was created for a special dinner in Paris with Wilhelm King of Prussia and the Tsar of Russia. It is said to have been produced in clear glass so as to see if poison was added and the punt is non-existent so a bomb could not be hidden there. Rumors abound. Regardless, it's famous and it's a good story. Tsar Alexander commissioned it as the official drink of the Russian Monarchy until Cristal was released commercially in 1945.

What is Gosset's claim to fame?

The first wine estate in Champagne, founded in 1584. They were not the first sparkling wine producers though. That honor belongs to Ruinart.

We would like a bottle of Celebris. How is that?

Gosset makes tremendously finessed wines, and despite being in Äy, relies predominantly on Chardonnay for their Celebris. Would you like the NV Blanc de Blancs, the Rosé, or the Vintage Celebris? They are all Extra Brut and undergo no malolactic fermentation. Gosset is the oldest winemaking estate in Champagne, but they were not the first sparkling producers (Ruinart was). $450 on a list. (Palm Bay imports)

  5. Les Chantereines (Avize, BdB)
  6. Chemin de Châlons (Cramant, BdB)

How can you frame Solera-based Champagnes table-side for a guest who "only drinks vintage champagnes"?

Since a solera system combines the wines of many different years, it erases the effect of any single vintage, bringing the terroir character more prominently into the focus.

  • Biodynamic producer and one of the finest in the Côte de Blancs
  • Harvest at unusually high ripeness and
