Eating patterns

Influenced by cultural background. Nurse can't change a clients belief About diet, but may help them adjust them to their benefit.

Culture

Affects the way people think, feel, and behave. Understanding this will help you with your patient to reach optimum nuteional health

Acculturation

Process that occurs as individual adopts the belief, values, attitudes, and behavior of the dominant culture. This cause diet to change rapidly among younger people.

Region

Individual are influenced by region they live rather than their ethic or culture background for food.

Anglo América

European ancestors, consume excessive amounts of simple sugars, fried foods, and calories.


Obesity, hypertension, and diabetes are risks.

African american

Food habits based on west indian/carribbean. Mainly fried, diet is high in fat, sodium, and sugars. Inadequate calcium, vitamin D, and potassium. Can cause hypertension, heart disease, obesity.

Latino American (hispanic)

Foods believed to be either hot or cold (not temp). Believed that balnce of hot and cold is needed to maintain health.

Mexican

Fried food are common, adults limit amount of milk, except in popular sweet baked dessert. Obesity and diabetes are high. Same hot and cold. Inadequate in calcium, iron, Vitamin A &C,

Caribbean

Eating patterns reflect those of country from where person originates.

Cuban

Spanish influence; fried foods, especially fish, poultry, eggs, rice and beans. Adults limit in milk, leads to calcium levels low.

Puerto rican

Limit use of meats, food cooked for long periods of time, or fried. Malt beer is believe to be nutritious and given to children. Diet low in calcium.

Asian Américan

Lactose intolerant is common. Limiting sodium is difficult due to over use of soy sauce, & other high sodium seasoning. Common in cardiac disease, hypertension, diabetes, cancer.

Chinese

Theory of yin&yang. Balances between positive and negative energy. Diet low in fat & high in starch. Stir frying and steaming is common cooking method. Common in liver problems, hepatitis, lung cancer.

Japanese

Light and use animal fat. Many vegetables. Contain fish, soup, and tea. Rice is common. Meat portion is small. Milk rarely used. Very healthy.

Korean

Heavily influenced by Chinese/japanese. Rice mixed with grains, beans. Sodium levels in diet lead to hypertension.

Filipino american

Food are rice, pork, fish, chicken adobo, mixed vegetables. Garlic and onions used daily, believe to thin blood, and lower BP. Hypertension due to soduim.

Southeast asian

Rice mainly, fish, soybean, fruit, vegetables. Milk rare after childhood. Hot water beverage preffer.

Middle eastern american

Vegetales and legumes are common, pork forbidden. Women eat after man's and child. Large quantities of fat added to food. Lamb and goat bread, rice. Calcium and protien inadequate.

Vegetarian

Many forms exist. Common characteristics are mainly plant food. Benefits are lower rates of coranary arteries disease, hypertension, non-insulin, obesity.

Vegans

Strict vegetarians, exclude all animal product, even eggs from diet. Need a source of B12 due to lack of it.. B12 is in animals only.

Lactovegetarian

Eat plant food plus diary product. No eggs.

Ovo-vegetarian

Eats plant foods, plus eggs. No dairy.

Lacto-ovo-vegetarian

Eat plant food, dairy , & eggs.

Jewish culture

Kosher meals demand.
