What is fermentation to produce ethanol

In fermentation it uses yeast to convert sugar to produce ethanol and carbon dioxide

What acts as a catalyst in fermentation?

Zymase enzyme in the yeast cells

Why is it important to prevent oxygen getting into the fermentation process?

The oxygen will react with the ethanol to produce ethanoic acid which lowers the ph and stops the enzyme working

What's a disadvantage of fermentation?

Once the concentration of ethanol reaches around 10-20% the reaction stops and the ethanol kills off the enzymes
