What is fermentation to produce ethanol |
In fermentation it uses yeast to convert sugar to produce ethanol and carbon dioxide |

Zymase enzyme in the yeast cells |

Why is it important to prevent oxygen getting into the fermentation process? |
The oxygen will react with the ethanol to produce ethanoic acid which lowers the ph and stops the enzyme working |

Once the concentration of ethanol reaches around 10-20% the reaction stops and the ethanol kills off the enzymes |
