Enzymes

Biological catalyst which are protein in nature

How is the rate of enzyme activity measured

Amount of product formed per time(in the case of catalase it's foam produced per minute which is a measure of the amount of oxygen formed per minute.

Immobilized enzyme

Enzyme that is fixed in position made insoluble and unable to move

Uses of immobilized enzymes

-food industry (pectins in juices released which changes colour and flavours)


-chemical industry (proteases in washing powders)


-production of antibiotics(penicillin acylase)

Advantages of immobilised enzymes

Permits enzyme recovery and therefore it's reuse making it cheaper



Product formed in a more purified form as the enzyme remains in the bioreactor and does not contaminate the product
