How is scotch malt whisky made?

soaked in water to germinate Barley is heated to stop fermentation some distilleries use peat to heat malt which imparts smoky peaty note. Malt is ground to form grist. soaked in warm water in the mash turn. activates diastase enzyme converts starches into sugars maltose then sucrose mixture now called wort. Yeast added to wort in a large tank called a washback. Fermentation can take up to 3 days. 5 to 7% by volume, and is now known as wash. wash pumped into a pot still known as washstill and distilled to 30% alcohol. Known as low wine. Moved into 2nd pot still known as the spirit still and distilled again the foreshots and the feints are removed. 70% alcohol. |
