Belgian (Blonde, Dubbel, Trippel)
*Developed by Trappist monks for personal and financial sustenance
Combines Pils malt and Munich malt with candi sugar. Malty beer with fruity esters. Unique and high quality because brewed by isolated monks.
Belgian Wit
*Developed in 14th Cen near Brussels.
*Belgian connection with the "spice island" colonies led to inclusion and maintenance of exotic spices.
*All but extinct in 1960s until revived by Peter Celis, founded De Kluis.
Helles
*Hot air kiln invented in 1817--light malt
*Led to Pale Ales in England, Pilsners in Bohemia, Marzen in Munich.
*Eventually to Helles in 1894 in Munich.
*The Franziskaner brewery, operated by Gabriel Sedlmayr’s brother, Joseph, introduced a pale lager to the Munich Oktoberfest in 1872 as a direct competitor to the Bohemian lagers. Finally, in 1894, Gabriel’s three sons produced a very pale lager that is today considered the first true helles lager.
Oktoberfest
*The offspring of 19th Cen Viennese beers, preceding Bohemian golden pilsners by one year.
*Before refrigeration, lager beers could only be brewed in cold months. Those intended to last the summer were called Marzens.
German Pilsner

*1838, Pils brewers frustrated with contamination of beer
*Hired Josef Groll from Bavaria
*He used lager yeast, light, partially malted barley, Saaz hops, Pils' soft water to make most popular beer in history
Vienna Lager
*After exploring the light malts invented in England, Anton Dreher of Dreher Brewery crafted Vienna lager.
*Light color, clean flavor.
Dunkel
*Oldest traditional style in Bavaria and Franconia, Germany.
*Style refined by Gabriel Sedlmayr with the invention of indirectly kilned malt. Retained dark, roasty flavors without smokiness
*Dominated by Munich Malt
Schwarz

Bock
Invented in Einbeck, brewing power near Hamburg.
*Spread to Munich when Duke Maximillian hired Elias Pichler to brew for Hofbrauhaus

Maibock
Pale but still high alcohol, high flavor.
*Developed as an intentional variation of Bock
Doppelbock
*Monks of St. Francis of Paula (Paulaners) invented dark, high protein, high carb beer to sustain them during fasts.
*Called it Salvator
*Similarity to Bock led to name Doppelbock. Otherwise independent.
