Australia, the Land Down Under, home of the kangaroo, the koala and the kookaburras, is an island continent that was colonized by European settlers in the later half of the 18th century. Australian cuisine is commonly dismissed as heavy, fast food cooking or weird dishes with kangaroo or crocodile meat as ingredients. Wrong and wrong again! Like its indigenous flora and fauna, the landscape of Australian cooking and food is varied and diverse with surprisingly twists to normal recipes. Meat, Fish and Vegetables

✤ The large coastline (11 million sq km) of Australia is home to many aquatic species, so it makes sense that seafood is a predominant food choice. Australia has nearly 600 varieties of fish, both ocean and freshwater, so fish species like the barramundi, abalone and lobsters feature regularly amongst most Australian recipes.

In 2012-13, the food and beverage share of total manufacturing value added was 21.6 per cent; this is virtually unchanged compared to 2002-03 share at 21.5 per cent. Overall, this showed that over the ten years from 2002-03 to 2012-13 the annual average growth was 0.1 per cent. Total manufacturing value add also grew at a negative rate over the same period but at a slightly higher rate of -0.2 per cent. In general, the percentage of total manufacturing value added compared to total Australian GDP has fallen from 9.7 per cent in 2002-03 to 7.1 per cent in 2012-13.

Australia’s native animals can often be difficult to spot in the wild, but you are guaranteed to see them in our world-class zoos and wildlife parks across our major cities and regional areas. Australia doesn’t have large predatory animals, the dingo, or wild dog, is our largest carnivorous mammal. Other unique carnivorous animals include the Numbat, Quoll and Tasmanian Devil, but none of these are larger than the size of an average house cat.
Dingoes are found all across Australia, except for Tasmania. Best places to see them are Queensland’s Fraser Island, Western Australia’s Kimberley and across the deserts of the Northern Territory and South Australia. Numbats are only found in Western Australia; and apart from wildlife parks, you can only see Tasmanian Devils in the wild in Tasmania. Endangered Quolls are also difficult to spot in the wild, but inhabit the wet forests of southeastern Australia and Tasmania, and a small area of northern Queensland. The bilby, a member of the bandicoot family, may be seen in Francois Peron National Park in Western Australia
