What is fermentation

Fermentation is the chemical reaction in which carbohydrates are converted into ethanol by yeast under Anaerobic conditions.

Equation for fermentation

Ethanol acid and reactive metals reaction

This produces a salt and hydrogen gas

Alkanoic acids and metal oxides

This forms a salt and water

Alkanoic acids and metal carbonates

Produce a salt, Co2 and water

Esterification

Alkanoic acid + alcohol = ester

Catalyst : conc H2SO4. Acts as a dehydrating agent to remove the water

Acid hydrolysis of esters

Ester is heated with acid catalyst (HCl or H2SO4) .

Products : alkanoic acid + alcohol

It is basically the reverse of esterification

Alkaline hydrolysis

Ester is heated with sodium or potassium hydroxide solution. The products are the sodium or potassium salt of the alkanoic acid and an alcohol

Saponification

Saponification is the alkaline hydrolysis of large esters found in animal fats and vegetable oil. Saponification is used to make soap

Equation for saponification
