Islay Malt Whiskies

Brandy
Brandy is the oldest of all liquers and is distilled from a fermented mash of grapes or other fruit. A true brandy can be distilled from any fruit. When the term brandy is used alone, it always refers to brandy made from grape wine.
Gin
Gin is neutral spirits re=distilled over juniper berries and other aromatics, such as coriander (a carrot family plant), angelica root, and cassia bark. It is colorless and is not aged. Gin makes an excellent cocktail base.
Rum
Rum is distilled from fermented sugar cane juice (pressed from raw sugar cane), fermented molasses, or a mixture of these. It ranges in color from white to very dark. There are 2 kinds of rum:-Lightbodied-Heavybodied
Lightbodied
Lightbodied rum is light or dark in color. Dark rum is sweeter but light rum is most popular.
Heavybodied
Heavybodied rum is more sweet and pungent due to being distilled differently.
Tequila
Fiery mexican liquor is made from a blue colored Agave plant. Produced only in 2 designated regions of Mexico, one surrounding town of Tequila, the other in the area of Tepatitlan. Ordinary tequila is white. Anejo must be aged for a minimum of one year in white oak casks. Gold tequila is aged in white casks for 2 to 4 years.
Vodka
Most vodka is produced primarily from corn, wheat, and potatoes. It is distilled at a very high alcohol content and highly refined and filtered. Vodka is colorless with no pronounced flavor and is almost odorless. Not aged. It is most versatile and will blend with anything. Vodka is the national drink of Russia.

Dessert Wines
Fortified wines, like Port and Sherry, are often classified as dessert wines. Fortified wines are made by adding "Grape Brandy" to wine to increase the amount of alcohol. At what point the alcohol is added during the winernaking process makes all the difference to the final product. Port is sweet because its fermentation process is cut short by adding the brandy during fermentation. On the other hand, Sherry is fortified only after fermentation is completed.-Harvey's Bristol Cream-Dry Sack-Sweet Vermouth
Sparkling Wines
Champagne and Sparkling Wines are generally served before or after meals. These are "active" wines and must be served chilled. True Champagne only comes from the Champagne region of France.
Distilled Wines
Brandy is a distillation of the fermented juices of grapes. Although made all over the world, the chief producer of brandy is France and the US. When making brandy other fruits may be used other than grapes, the type of fruit is used in the name of the Brandy (ie Apple Brandy, Peach Brandy, Cherry Brandy, etc). The best known is Cognac While all Cognac is Brandy not all Brandy is Cognac. Cognac is a brandy distilled only in the Cognac region of France which borders the Charente River. Cognac, by law, may be produced from the white grapes only. Brandy or Cognac should be served in a Brandy Snifter. They range in size from 5 oz. to 34 oz. A standard serving will be 1 to 2 oz. depending on the house policy. Brandy snifters are designed so that the customer may sniff the aroma of the Brandy while drinking it. To enhance the aroma it should be served warmed.
The procedure of warming a brandy snifter:
-Warm it by cupping your hands around the bowl of the glass.-Carefully run the bowl of the glass over a candle or lighter for a few seconds.-Warm the outside of the snifter in hot water or take a rocks glass and fill it hald way with hot water and lay the snifter over the top of the rocks glass on its side, then the customer can let it warm as much as they wish.
