Bran

Thefibrous shell of a grain that contains the most nutrients

Endosperm

The kernel that makes up the bulk of the grain and which contains a small amount of vitamins and minerals

Germ

The smallest part of the grain that contains many nutrients and healthy fats

Processed grains

Grains from which the bran and germ have been removed, leaving behind the endosperm, which is mainly carbohydrates with few nutrients

Whole grains

Grains which have not been processed or refined and are therefore more nutritious than processed grains. Whole grains contain more essential nutrients-- Vitamin E, thiamine, iron, magnesium, plus fiber and antioxidants--than processed grains

Refined grains (or processed grains)

Refinedgrains are finer in texture and have a longer shelf life than whole grains, but themilling process has removed iron, B complex vitamins, and fiber

Grains from which certain nutrients that were removed during processing are added back

Fortified grains

Processed grains to which have been added nutrients that don’t occur naturally
