discover that I have found a pecan, or rather the broken shell of a pecan. All that remains is the shell, there is no nut to be found. The squirrels must have feasted on the nut before the start of winter and deposited the inedible bits beside the tree. Around the base of the pecan tree lies more carcasses of nuts. The squirrels clearly stocked up for the winter. The tree I sit beneath is not the only pecan tree in the area. This tree is just one of many in Brackenridge Park. I have a distinct idea of where to find pecans in the park due to my family’s habit of coming to the Brackenridge to scavenge for nuts. Together, both humans and animals, we work alongside each other to accumulate our stashes of nuts. Every now and then, I crack open a pecan to decide if they are ripe. You cannot go based on looks alone, so every nut is similar to a game of Russian roulette. With one pecan you may be rewarded…

Okay so it might be a little early for this since it’s not officially fall but I can’t help it. Yesterday I may have even made a sweet potato pie…so on that note, on to todays recipe. It took me a few attempts to make this refined sugar-free pumpkin cobbler but it was sooo worth it! I managed to create a gooey caramel flavoured pumpkin pecan cobbler using natural sugars. In this recipe I used lucuma powder and coconut sugar to replace the typical white and brown sugar. Lucuma powder is a…
