    and so on. Empanadillas are a Latin delicacy which can be made with a variety of different fillings: meats, seafood, cheeses, vegetables or even a combination of the three. The filling is wrapped in a circle shaped dough and fried until ready to serve. They are delicious and very easy to make despite the many steps it takes. You can buy the disc at a supermarket, which you can find in the frozen section aisle, but I prefer to make my own dough. I like to make empanadillas as appetizers for parties, snacks when my kids are on the run, and they need something quick to munch on. Empanadillas are good for a quick meal when you’re running late and you need to feed everyone quick. Every summer we go to the beach and every weekend, I would be frying empanadillas. I would bring a whole pan fill of empanadillas, and they would be gone by the middle of the day. When my children’s schools have fundraisers to raise money, for uniforms or books I would sell empanadillas for a $1.50. The first step to make an empanadillas is making the dough. You will need flour, sugar, salt, baking powder, an egg, shortening, and chicken stock. To make the dough you will combine the dry ingredients (3 cups flour, 1 tablespoon baking powder, 2 teaspoons sugar, and salt) in one bowl and the wet ingredients (1 egg, ½ shortening and ½ cup chicken stock) in another.
